Weight Watchers Chocolate Chip Cookies

Weight Watchers Chocolate Chip Cookies

From the Weight Watchers New Complete Cookbook (Points Plus)

Ingredients (ever so slightly altered by me)

  • 1/2 cup oats (not instant, the real deal)
  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt (I changed this to kosher salt and added a bit more, after tasting the cookies with 1/4 tsp kosher salt both my husband and I agreed it needed a bit more salt to make the chocolate really “pop”)
  • 4 Tbsp unsalted butter, slightly melted
  • 3/4 cup packed dark brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semisweet mini chocolate chips (these were good, but next time I think I’ll do 6 ounces of 70 percent+ dark chocolate chopped with a knife and see how that tastes).

Instructions

Heat Oven to 350 degrees

Cover baking sheet with a piece of parchment paper

Put Oats in a blender or food processor and pulse until they are finely ground.  This is so cool — it’s like it makes an “Oat Flour” that you use in this recipe. Healthy, low in points, and gives a really nice nutty flavor to the cookies along with the Whole Wheat flour.

Ground Oats

Mix Oats, Whole Wheat Flour, Baking Soda and Salt together.

Dry Ingredients

In a mixer, beat butter, brown sugar, egg and vanilla until well blended.

Stop mixer, add dry ingredients. Turn on low and mix thoroughly. Use a scraper to scrape down if needed. Just mix until barely blended.

Add Chocolate Chips. Remove Bowl from mixer & mix these in by hand.

Roll into balls of dough about 1 heaping Tbsp each. Put onto baking sheet. Should make about 20 balls. The balls will need to be pressed together with your hands to stick as the batter is very dry feeling compared to regular batter.

Balls of Dough

Bake for 14 minutes.

Remove from oven and let cool for 5 minutes on sheet.

Cooling Cookies

Remove from sheet to cooling rack and let cool for another 5 minutes.
